An alternative to using pie crust is to use Bisquick. Bisquick is very tasty in place of the pie crust of a chicken pot-pie. Mix the dough according to the biscuit recipe on the box, and follow the same steps described above
Ingredients:
1 package of boneless skinless chicken breasts2 10oz cans of 98% fat free cream of chicken soup2 29oz cans of mixed vegetablesPie crust or BisquickDirectionsTo make a good homemade chicken pot-pie that’s within anybody’s budget, start with a package of boneless skinless chicken breasts. Chicken breasts are white meat and hold together much better than using dark meat such as legs and thighs. You won’t have to worry about the white meat being dry because of the sauce in the pie.Boil the chicken until it’s fully cooked, but be sure not to overcook it. The chicken should stay together when mixing it with the other ingredients and not fall apart. Depending on how much chicken there is and whether the chicken is frozen or not, this process takes approximately 30 minutes. When the chicken is finished cooking, drain and place it into a bowl of ice water. Placing the chicken in ice water is not necessary, however, the chicken will be hot and may take a while to cool off enough to handle. Ice water will reduce the chicken’s core temperature quickly. At this point, preheat the oven to 350 degrees.Chicken pot-pie is basically a casserole so you want to ensure than the contents of the pie are distributed equally throughout the dish, and avoid large chunks of ingredients. Once the chicken has cooled enough to handle without burning yourself, cut it into half inch pieces and place into a large mixing bowl.Fresh vegetables always make a dish taste better, but for low cost and time saving, canned vegetables will work just fine. Two 29 ounce cans of mixed vegetables will be plenty for the pie. If the vegetables are too big, feel free to cut them into quarter inch pieces. Drain the vegetables and add them to the bowl with the chicken. Now is the time to add the two 10 ounce cans of cream of chicken soup. For a healthier pot-pie use the 98% fat free [link widoczny dla zalogowanych], there is no difference in taste and your chicken pot-pie will be much healthier. You will want to add the cream of chicken soup lastly in order to know how much water to add to the mixture. With a rubber spatula [link widoczny dla zalogowanych], gently mix all the ingredients together. Stirring too fast can squash the vegetables. Slowly add 1/4 cup of water at a time while you stir. The flavor of the pie comes from the thickness of the chicken soup. You want just enough water so that all the ingredients are mixed with the soup, but not too much water to make a soup. Thinning the soup with water will also reduce the rich flavor that the soup adds to the pie. For this recipe, about 1/2 to 1 cup of water should suffice. After all the ingredients have been mixed together, pour them into a baking dish large enough for your pie. Now [link widoczny dla zalogowanych], a top crust is needed to turn this casserole into a chicken pot-pie. Grocery stores have boxed pie crusts which are easy to make. Add a little ice water and it will form into pie crust. If using a pie crust, roll the crust out into the shape of the baking dish you are using as best you can.Carefully, place the crust on top of the ingredients in the baking dish. Be sure that the pie crust is as close to the size of the baking dish as you can get it because once you place it on the wet ingredients you won’t be able to re-roll it. Placing the crust gently on top is important as well, this will keep the chicken soup from getting on top of the crust. It’s okay if this happens, but the final product makes for a nicer appearance if there is no soup on the crust.
Chicken Pot-Pie
Cooking is a wonderful pass time in which everyone should be able to enjoy. A homemade chicken pot-pie is easy to make, healthy, and can fit into anybody’s budget.
