Preheat oven to 400°. Rub 1/2 tsp salt and 1/2 tsp pepper on beef tenderloin.Cook beef in roasting pan for 25-30 minutes. Remove from oven and cool to room temperature.Reduce oven to 350°.In small pan, melt butter at med-high heat. Add chopped mushrooms, onions, and remaining salt and pepper. Saute for several minutes until onions are softened.On lightly floured surface, use a floured rolling pin to roll out pastry to a 10 x 13-inch rectangle.Mix egg yolk and water in a small bowl. Spread mushroom mixture evenly on rolled pastry just an inch or two from edge all the way around.Place beef in center of pastry. Wrap pastry around beef and pinch edges closed. Brush with egg yolk.Place roast seam side down on a lightly greased baking sheet. Brush top of pastry with egg yolk.Using dough scraps or another sheet of pastry, cut out star and crescent moon shapes with cookie cutters. Arrange cut outs on top of pastry and around the baking sheet. Brush with remaining egg yolk.Bake for 25-30 minutes. If pastry browns too quickly, cover loosely with aluminum foil. Cool for 10 minutes before slicing. Makes 10 servings.Holiday Main Course
