To shed a little more light on the matter, the sponge pudding is also similar in texture and style to the low fat Genoese sponge cake spawned in the early 19th century by a French cook named Fauvel. The term 'sponge cake' is believed to have come into existence sometime during the 18th century. The earliest direct reference to this simple, yet versatile dessert, is contained in a letter Jane Austin wrote in 1808. Evidently she was quite fond of sponge cakes. It is thought sometime towards the end of the 19th century the term 'sponge-cake pudding' arose, which eventually (somehow) just became sponge pudding.
